We’re seeking a skilled and passionate Sushi Chef to lead a sushi counter within a dynamic NYC-based specialty supermarket. This is a fast-paced, high-quality concept that blends precision, speed, and hospitality, offering freshly prepared sushi with a focus on nigiri, rolls, and expertly butchered whole fish. The Sushi Chef will be responsible for daily operations of the sushi counter, including menu execution, customer interaction, and maintaining the highest standards of freshness and technique.

Key Responsibilities:

Sushi & Fish Preparation:

  • Prepare high-quality nigiri, sashimi, rolls, and other traditional items with consistency and care.
  • Butcher whole fish (including salmon, tuna, and other seasonal selections) with accuracy and efficiency.
  • Ensure proper handling, storage, and rotation of seafood and sushi ingredients.

Customer Experience:

  • Engage with customers at the sushi counter in a warm and approachable manner.
  • Educate guests on daily selections, ingredients, and preparation methods.
  • Deliver a high-touch service experience in a casual supermarket setting.

Kitchen Operations:

  • Maintain a clean, organized, and compliant work station following all NYC DOH food safety standards.
  • Manage daily prep, restocking, and station cleanliness for efficient service flow.
  • Support training and oversight of junior staff as needed.

Business Contribution:

  • Partner with store leadership on seasonal specials and promotional items.
  • Monitor food cost, minimize waste, and help grow sales through consistency and quality.
  • Represent the store’s culinary values through professionalism, passion, and reliability.

Qualifications:

  • Minimum 3 years of sushi preparation experience in a high-volume or specialty setting.
  • Proven ability to break down whole fish (including salmon, tuna, and shellfish) for sushi use.
  • Mastery of nigiri technique and Japanese knife skills.
  • Familiarity with sushi counter operations and customer-facing service.
  • Comfort working evenings, weekends, and holidays as needed.
  • Fluency in Japanese culinary terms is a plus.
